Ratatouille is an ideal dish for many occasions, especially in when you are with friends.

Ingredients

1 large eggplant (or 2 small ones)
2 zucchini
2 red peppers
1 onion
2 cloves of garlic
3 tomatoes
olive oil
herbs de Provence
salt and pepper

Preparation

Chop the onion and garlic.
Cut the vegetables into medium-sized cubes.
In a saucepan over medium heat, fry the garlic and onions in 2 tablespoons of olive oil.
As soon as the onion looks golden yellow, add the chopped tomatoes and mix well.
Cook for about 5 minutes until the tomatoes are soft.
Then add the red peppers and mix everything.
Now add the eggplants and mix everything.
Add zucchini and mix well again.
Finally, add the herbs and salt and pepper to taste.
Cover and simmer for 30 to 40 minutes, stirring occasionally.
